Cheesy BBQ Casserole

  1. Heat oven to 350F.
  2. Spray a 2 quart casserole dish with cooking spray.
  3. (I used my Pampered Chef round baker.)
  4. Cook and drain pasta according to package directions.
  5. Set aside.
  6. In a large skillet, cook beef and onion over medium heat for 8-10 minutes or until beef is brown.
  7. When its done, drain off the grease.
  8. Stir pasta, 3 Tablespoons of parsley, milk, BBQ sauce, mozzerella cheese and 1 cup of Monterrey Jack cheese into the beef in the skillet.
  9. Stir well.
  10. Spoon mixture into the prepared casserole dish.
  11. Sprinkle with remaining 1 cup Monterey Jack cheese and parsley, plus a swirl of BBQ sauce across the entire surface.
  12. Bake uncovered 30-40 minutes, or until hot and bubbly.
  13. Enjoy!
