Maitre D'hotel Butter Recipe
- 1 stick butter
- 1 Tbsp. minced fresh parsley
- 1 Tbsp. freshly squeezed lemon juice
- a healthy pinch of white pepper
- In a mixer with the paddle attachment, beat butter at low speed till it is light and smooth.
- Add in all ingredients and beat to combine well.
- Roll up the butter into a log shape using waxed paper or possibly plastic wrap and chill till hard.
- Cut slices 1/4 inch thick and serve over freshly grilled steaks or possibly chops just before serving.
- Variations: Pureed garlic, grated Parmesan cheese, or possibly pureed shrimp or possibly anchovies may be added for flavor variations appropriate with many simple dishes.
- Garlic, Parmesan and anchovies go particularly well on pasta dishes with grilled meats as an accompaniment.
- Shrimp butter is excellent with rice.
