Crockpot Homemade Potato Soup
- 2 pounds potatoes pared, cut in bite size pieces, about 6 potatoes
- 2 each leeks washed, pared, cut in bite size pieces
- 2 each onions chopped
- 1 each carrots pared, sliced
- 1 each celery stalks sliced
- 4 each chicken bouillon cubes
- 1 tablespoon parsley flakes
- 4 cups water
- 1 1/2 teaspoon salt
- 1 x black pepper
- 2 tablespoons butter
- 13 ounces evaporated milk
- 1 x chives chopped
- Put all ingredients except milk and chives into a slow cooker or Crockpot.
- Cook on low 10 to 12 hours or high 3 to 4 hours.
- Stir in milk in last hour.
- Serve topped with chives.
