Roasted Red Bell Pepper Crostini

  1. Turn your oven onto broil.
  2. Roast your red bell pepper under the broiler, turning as needed, to blister/blacken on all sides.
  3. Place bell pepper in a bowl, and tightly cover with plastic wrap for 5 minutes.
  4. Peel skin from the bell pepper, remove seeds, and very thinly slice into strips.
  5. Have bread slices on a cookie sheet, and brush each slice with the olive oil, and lightly sprinkle with garlic salt.
  6. Divide the bell pepper between the eight slices of bread, and lay on top of each.
  7. Next add a generous amount of parmesan cheese to the top of each slice of bread.
  8. Place the crostini under the broiler to melt the cheese, and become bubbly, about 2 minutes.
  9. Watch so it doesnt burn!
  10. Remove from the oven and freshly grind black pepper over each piece.
