Roasted Red Bell Pepper Crostini
- 1 whole Red Bell Pepper
- 8 slices Good Italian Or French Loaf Bread
- 3 Tablespoons Olive Oil
- 1 teaspoon Garlic Salt
- 5 ounces, weight Shaved Parmesan Cheese
- 8 dashes Fresh Ground Black Pepper
- Turn your oven onto broil.
- Roast your red bell pepper under the broiler, turning as needed, to blister/blacken on all sides.
- Place bell pepper in a bowl, and tightly cover with plastic wrap for 5 minutes.
- Peel skin from the bell pepper, remove seeds, and very thinly slice into strips.
- Have bread slices on a cookie sheet, and brush each slice with the olive oil, and lightly sprinkle with garlic salt.
- Divide the bell pepper between the eight slices of bread, and lay on top of each.
- Next add a generous amount of parmesan cheese to the top of each slice of bread.
- Place the crostini under the broiler to melt the cheese, and become bubbly, about 2 minutes.
- Watch so it doesnt burn!
- Remove from the oven and freshly grind black pepper over each piece.
