Thick Potato Soup
- 4 Peeled and boiled potatoes
- 2 Fresh Carrots
- 1/4 onion, chopped
- 1 can Sweet Corn
- 2 cup milk
- 1 stick butter or margerine
- 2 dash cayenne pepper
- 1 Salt and Pepper to Taste
- 2 tbsp All-purpose flour, less for thinner consistancy
- Peel, pair and boil potatoes and carrots
- Once desired tenderness is achieved, drain and remove carrot pieces and set aside.
- Mash potatoes slightly and set aside.
- Heat milk in a small saucepan to just before boiling.
- Pour over potatoes and gently stir.
- Melt the stick of butter.
- Add flour, cayenne pepper, salt and pepper.
- Mix well.
- Add can of corn, carrots and onion.
- Cook for two minutes.
- Pour butter mixture over potatoes and milk.
- Mix gently.
- Continue to cook over low heat for 10 minutes so that all flavors can merge together.
