Zesty Potato Soup
- 4 stalks celery
- 2 carrots
- 2 potatoes
- 1 onion
- 1 green pepper
- 1 lb Velveeta cheese
- 12 cup whole milk
- 5 cups chicken broth
- 1 dash pepper
- Peel and chop vegetables.
- Combine vegetables with chicken broth in soup pot, reserving the milk and cheese to add later.
- Cook slowly, until vegetables are tender.
- Stir, to keep from sticking.
- Add "soup" to blender, puree.
- Pour blended soup back into soup pot.
- Whisk in milk.
- Reduce heat and add cubed Velveeta.
