Nectarine Daiquiri
- 2 pounds ripe nectarines (unpeeled), quartered, pitted
- 3/4 cup simple syrup
- 1 1/4 cups white rum
- 1 cup plum wine
- 2/3 cup fresh lime juice
- 3 cups ice cubes
- Fresh plum wedges (optional)
- Combine nectarines and simple syrup in processor.
- Puree until smooth.
- Strain mixture into large pitcher, pressing on solids in strainer to extract as much liquid as possible.
- Discard solids in strainer.
- Add rum, plum wine, and lime juice to pitcher.
- Stir to blend well.
- (Can be prepared 6 hours ahead and refrigerated.)
- Add 3 cups ice cubes to pitcher.
- Pour daiquiri into cocktail glasses.
- Garnish rim of each glass with plum wedge, if desired, and serve.
