Whitefish Fillets on Spinach for Two

  1. Heat oven to 425 degrees F.
  2. Melt butter in large nonstick skillet on medium-high heat.
  3. Add fish, skin sides up; cook 2 min.
  4. or until bottoms of fillets are golden brown.
  5. Transfer fish, skin sides down, to shallow baking dish sprayed with cooking spray.
  6. Bake 6 min.
  7. or until fish flakes easily with fork.
  8. Meanwhile, cook spinach in dressing in same skillet on medium-high heat 2 to 3 min.
  9. or just until spinach is wilted, stirring occasionally and adding pine nuts and raisins to the skillet for the last minute.
  10. Spoon spinach mixture onto platter; top with fish.
