Pork Tenderloin Periscope(Serves 6 To 8; Oven Temperature 450~ To 500~)

  1. Cut the tenderloin in about 4-inch sections so they are all about even.
  2. Roll in black peppercorns.
  3. Roll in melted butter, then roll in fresh bread crumbs mixed with thyme and parsley.
  4. (Let rest to dry a bit.)
  5. Dribble a little butter over each tenderloin and roast in 500u0b0 Fahrenheit oven for approximately 10 minutes or until it firms up and becomes crispy on outside (meat becomes firm to touch as it cooks).
  6. The end product should be crispy on the outside but inside it's still faintly pink, yes it's cooked). Slice meat and arrange on plates.
  7. (Sprinkle with salt, optional.)
