Yellow Squash Penne in Buttery Parmesan Sauce
- 3/4 cups Dried Penne Pasta
- 3 teaspoons Butter, Divided
- 1 whole Small Yellow Squash (or Zucchini), Shredded
- 2 teaspoons Grated Parmesan Cheese
- Salt
- Cracked Black Pepper

- Boil pasta according to package directions.
- Reserve 1/4 cup of the pasta water, drain, and set aside.

- Meanwhile, heat 1 teaspoon of butter over medium heat in a pan.
- Add squash and saute until tender, 3-4 minutes.
- Then add the cooked pasta, remaining 2 teaspoons butter, and parmesan to the pan.
- Sprinkle with a pinch of salt and pepper.
- Stir until cheese and butter melt.
- Add pasta water (1 tablespoon at a time) if pasta seems too dry.

- Scoop into a serving bowl and top with more pepper and parmesan, if desired.
