Black and white tea party cookies
- 250 grams ap flour
- 8 grams baking powder
- 70 grams granulated sugar
- 1 egg
- 150 grams unsalted butter
- 25 grams unsweetened cocoa powder
- 1 tsp rum
- 5 grams granulated sugar
- 20 grams brown sugar
- In a bowl mix the ingredients for the dough and knead until homogenous
- Put aside 2/3 of the dough
- Add the ingredients for the black dough to the remaining 1/3 and knead
- Roll out the white dough to form a rectangle
- Form the black dough into a log and place it on the white dough rectangle
- Wrap up black dough with white one making an even roll
- Let the roll rest in the fridge for 60 minutes
- Cut the roll into 1cm disks
- Place the disks on a baking tray and sprinkle brown sugar on them
- Bake for 15 minutes at 180C
