Apple Fennel Salad With Walnuts Recipe

• 1 sm head fennel (apx. 1 lb.) l lb. Fuji apples, unpeeled
• 2 Tbsp. walnut oil
• 2 Tbsp. raspberry vinegar
• 1/4 tsp salt
• 1/2 c. toasted walnut halves
• 2 Tbsp. chopped parsley

1. Trim fennel into a bulb.
2. Quarter and thinly slice.
3. Quarter apples, remove cores and thinly slice.
4. Toss fennel and apple slices with oil to coat.
5. Then toss with vinegar and salt.
6. Sprinkle with walnuts and parsley just before serving.
