Simple Rosti (Hash Browns)

  1. Shred the potatoes in a food processor.
  2. If the earthy smell of the potatoes bothers you, rinse them under water.
  3. Sprinkle on salt and pepper and heat the potato in a microwave until tender.
  4. Leave to cool.
  5. Mix in the grated cheese and continue to mix while mashing.
  6. Melt the butter in a frying pan, then add the mixture from Step 3 and form them into pancakes.
  7. At first, the rosti may break apart easily, so press down on them firmly with a spatula.
  8. Cook the rosti until golden, flipping occasionally.
  9. When both sides are crispy, they're done.
