Crusted Fish with Tomato-Bean Stew

  1. Heat dressing in medium saucepan on medium-high heat.
  2. Add yellow onions; cook and stir 3 min.
  3. Add beans, tomato sauce, broth and 1/2 tsp.
  4. chili powder.
  5. Bring to boil.
  6. Simmer on medium-low heat 10 min., stirring occasionally.
  7. Meanwhile, place cracker crumbs in pie plate.
  8. Mix mayo and remaining chili powder; brush fish with mayo mixture.
  9. Dip in crumb mixture until coated on both sides; gently shake off excess crumb mixture.
  10. Cook in large nonstick skillet on medium-high heat 3 to 4 min.
  11. on each side or until fish flakes easily with fork.
  12. Meanwhile, stir raisins into stew; cook 5 min.
  13. or until stew is thickened, stirring occasionally.
  14. Spoon 1/4 cup rice onto each of 6 serving plates.
  15. Top with stew and fish.
  16. Sprinkle with nuts and green onions.
