Vegetable Dumplings

  1. Combine mushrooms, onion, spinach, garlic, ginger root, curry powder, sherry, egg whites, soy sauce and cayenne pepper in a large bowl.
  2. Mix thoroughly.
  3. Place a tablespoon of the mixture in the center of a wonton wrapper.
  4. Raise the corners and pinch them together, leaving a small opening for steam to escape.
  5. Line the bottom of a steamer basket with lettuce, kale or spinach leaves.
  6. Place a layer of dumplings in the steamer, and steam until dumplings are done, about 10 minutes.
