Wild Rice Stuffing
- 2 lg. apples, chopped
- 1 lb. mushrooms, chopped
- 2 tbsp. oil
- 2 tsp. salt
- 2-1/2 cup water
- 2 acorn squash, cleaned
- 1 cup wild rice
- 1/2 cup chopped celery
- 1/2 cup diced onion
- In 10-inch skillet brown onion in oil.
- Add celery and mushrooms; cook 5 minutes.
- Add wild rice and brown for 3 minutes.
- Slowly, add water and bring to boil, stirring occasionally.
- Add salt and reduced heat; simmer for 1 hour.
- Remove from heat and mix in chopped apples.
- Stuff into acorn squash.
- Bake in pan with 1-inch water in bottom and covered with tin foil for 1 hour or until squash is tender.
