Wild Rice Stuffing

  1. In 10-inch skillet brown onion in oil.
  2. Add celery and mushrooms; cook 5 minutes.
  3. Add wild rice and brown for 3 minutes.
  4. Slowly, add water and bring to boil, stirring occasionally.
  5. Add salt and reduced heat; simmer for 1 hour.
  6. Remove from heat and mix in chopped apples.
  7. Stuff into acorn squash.
  8. Bake in pan with 1-inch water in bottom and covered with tin foil for 1 hour or until squash is tender.
