Honey Pecan Snaps
- 1/2 cup butter or margarine, soften
- 1/2 cup vegetable shortening
- 1 1/2 cups sugar
- 1/2 cup honey
- 2 large eggs
- 2 tablespoons lemon juice
- 4 cups flour, all-purpose
- 2 1/2 teaspoons baking soda
- 1 teaspoon cloves ground
- 1 teaspoon cinnamon ground
- 1/2 teaspoon ginger ground
- 1/2 teaspoon salt
- 1 cup pecans chopped
- 1 x sugar
- In a mixing bowl, cream butter, shortening and sugar until fluffy.
- Add honey, eggs and lemon juice, beat well.
- Combine dry ingredients, gradually add to creamed mixture.
- Fold in pecans.
- Shape into 1 inch balls, roll in sugar.
- Place on ungreased baking sheets.
- Bake at 350F (180C) for 12 to 13 minutes, or until golden brown.
- Cool 2 minutes, remove to wire racks.
