Green Chile Chili

  2. Heat a large Dutch oven over medium-high heat.
  3. Add oil to pan; swirl to coat.
  4. Add beef; saute for 5 minutes or until no longer pink, stirring to crumble.
  5. Add chopped onion, chili powder, and paprika; saute 4 minutes, stirring occasionally.
  6. Add garlic; saute for 1 minute, stirring constantly.2.
  7. Stir in beer; bring to a boil.
  8. Cook 15 minutes or until liquid almost evaporates.
  9. Add salsa and the next 3 ingredients (through beans); bring to a boil.
  10. Reduce heat, and simmer for 30 minutes, stirring occasionally.
  11. Ladle 1 1/4 cups chili into each of 4 bowls, and top each serving with 1 tablespoon cheese.
  12. Sprinkle with green onion.
