Barley Pilaf With Grilled Apples Recipe

  1. PILAF: In a 2-qt saucepan, combine the barley, oil, vanilla, cinnamon, nutmeg, and cardamom.
  2. Saute/fry till fragrant, about 2 minutes.
  3. Add in the apple juice and water.
  4. Bring to a boil, reduce the heat, cover, and simmer for 45 to 60 minutes., or possibly till the barley is tender and all the liquid has been absorbed.
  5. APPLES: Core the apples and cut crosswise into thin rounds.
  6. Place on a baking sheet.
  7. Sprinkle with 1 tb apple juice and 1/8 ts cinnamon.
  8. Broil about 4 inches from the heat for about 3 min.
  9. Flip the slices and sprinkle with the remaining juice and cinnamon.
  10. Grill for 2 min.
  11. Serve warm with the pilaf.
