Spinach Artichoke Dip
- 2 Tablespoons Unsalted Butter
- 1/2 cups Chopped Onion
- 2 cloves Garlic, Finely Minced
- 2 packages (10 Oz. Size) Frozen Chopped Spinach, Thawed And Squeezed Dry
- 1 can (14 Oz. Size) Artichoke Hearts, Drained And Chopped
- 1 package (8 Oz. Size) Regular Cream Cheese, Softened
- 1 cup Sour Cream
- 1 cup Shredded Monterey Jack Or Pepper Jack Cheese, Divided
- 1 cup Grated Parmesan Cheese, Divided
- Salt To Taste
- Pita Chips, Tortilla Chips, Or Toasted French Bread Slices, To Serve
- Additional Sour Cream And Salsa, To Serve (optional)
- Preheat oven to 400 degrees F.
- Melt butter in a small pan over medium heat.
- Add onion and garlic and saute for 34 minutes.
- Stir in spinach, artichokes, cream cheese, sour cream, 3/4 cup shredded cheese, and 3/4 cup Parmesan cheese.
- Continue to cook over medium heat until mixture is heated through and well combined.
- Add salt to taste.
- Place mixture in a baking dish and sprinkle top with remaining Monterey Jack and Parmesan cheese.
- Bake for 15 minutes, until bubbly hot and cheese begins to brown.
- Serve with pita chips, tortilla chips, or toasted French bread slices.
- You can also serve more sour cream and salsa on the side as accompaniments.
