Pumpkin Muffins with Nutty Topping

  1. Preheat oven to 400 degrees (200 C.).
  2. Grease twelve 2 1/2" by 1 1/4" muffin pan cups.
  3. In large bowl, combine flour, baking powder, pumpkin-pie spice, and salt, set aside.
  4. In medium bowl, with wire whisk, mix milk, pumpkin, brown sugar, melted margarine or butter, vanilla, and eggs until blended.
  5. Stir into flour mixture until just moistened.
  6. Spoon batter into muffin pan cups and sprinkle tops with chopped pecans.
  7. Bake 25 to 30 minutes until toothpick inserted in center of muffin comes out clean.
  8. Immediately remove from pan and serve warm.
  9. (Or, cool completely on wire rack and reheat).
