Yummy Chunky Chicken Soup With Vegetables
- 8 chicken legs, skin and fat removed
- 4 large carrots, peeled with tips removed, cut into thirds
- 4 potatoes, quartered
- 3 small onions, tips and skin removed, quartered
- 3 ears corn, husked, rinsed, and cut into 2 inch chunks
- 1 cup brown rice
- 1 chicken bouillon cube
- 1 tablespoon sea salt
- 2 teaspoons fresh ground pepper
- Fill a huge pot 2/3 full of water.
- Toss in all ingredients.
- Boil, then simmer for one hour.
- Serve with whole wheat crackers or crusty bread.
- Note: after 45 minute taste broth and add salt and pepper to taste.
