Sausage Frittata
- 400 g beef, chipolatas
- 1 medium onion, finely diced
- cooking spray
- 50 g salami, cut into 2 cm pieces
- 1 medium red capsicum, cut into 2 cm pieces
- 8 eggs
- 12 cup cream
- 34 cup grated cheese
- 12 cup parsley, chopped
- Preheat oven to 180C.
- Use dish that is 22 x 18 cms approximately.
- Grease 6 cup ovenproof dish.
- Heat fry pan, cook chipolatas over moderate heat.
- This will take 5 or 6 minutes, turning and cooking.
- Drain on paper towel.
- Spray pan with oil, add onion, cook , stirring for 4 minutes.
- Add salami and capsicum, cook 5 minutes till vegies are soft.
- Whisk eggs, cream, cheese and parsley in large jug.
- Stir into onion mixture, pour into dish.
- Top with chipolatas.
- Bake uncovered for 35 minutes till set.
- To serve, cut into slices.
