Boston Cooking School's Blanketed Chicken Recipe
- 2 broilers, split and cleaned
- Salt and pepper
- 2 tbsp. finely minced green pepper
- 1 tbsp. finely cut chives
- 8 thin slices bacon
- 4 tbsp. flour
- 1 1/2 c. cream or possibly half stock and half cream
- Place broilers in pan, sprinkle with salt, pepper, green peppers and chives.
- Cover with bacon and bake in warm 400 degree oven till tender.
- Surround with sauce made of 3 Tbsp.
- fat from pan, flour, and cream, seasoned with salt and pepper.
