Asian-American Slaw With Peanuts And Jalapenos
- 1 1/2 pounds cabbage, coarsely chopped
- 1 small red bell pepper, chopped
- 1 onion, chopped
- 2 stalks celery, sliced
- 2 tablespoons seeded and minced jalapeno pepper
- 1 1/2 teaspoons minced fresh ginger root
- 1/4 cup crunchy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon white sugar
- 1 tablespoon dark sesame oil
- 1 teaspoon salt
- 1/2 cup chopped dry-roasted peanuts
- Toss cabbage, red bell pepper, onion, celery, jalapeno pepper, and fresh ginger in a large salad bowl. Whisk peanut butter, soy sauce, lime juice, sugar, sesame oil, and salt in a separate bowl until dressing is smooth. Pour dressing over slaw and toss to combine. Let stand at least 1 hour; serve sprinkled with chopped peanuts.
