Strawberry or Raspberry Squares

  1. Mix graham crumbs and butter.
  2. Press one cup of mixture onto the bottom of a 9" square pan.
  3. Set remaining crumb mixture aside.
  4. Combine berries, dry jelly powder, sugar and lemon extract if using in medium saucepan.
  5. Bring to a boil on medium-high heat.
  6. Reduce heat to low and let simmer 3 minutes or until jelly powder is dissolved, stirring occasionally.
  7. Remove from heat.
  8. Let cool 20 minutes to room temperature.
  9. Gently stir in 1 1/2 cups of whipped topping and pour over crust.
  10. Refridgerate 3 hours or until firm.
  11. Cover with remaining whipped topping, and sprinkle with remaining crumb mixture.
  12. Cut into 24 pieces to serve.
  13. Store leftover dessert in refrigerator.
