Bittersweet Chocolate Sauce

  1. Whisk sugar and cocoa powder in heavy small saucepan to blend.
  2. Whisk in 1/2 cup water.
  3. Add chopped chocolate.
  4. Stir over medium heat until chocolate melts and mixture is smooth and begins to simmer, about 5 minutes.
  5. (Can be made 2 days ahead.
  6. Cover and refrigerate.
  7. Rewarm chocolate sauce before serving.)
