ULTIMATE ONION SOUP
- 2 medium red onions, finely chopped
- 2 medium white onions, finely chopped
- 2 medium vidalia onions, finely chopped
- 1 green onion, finely chopped
- 1 (750 ml) bottleof la fin du monde ale
- 1 garlic clove, chopped finely
- 3 tablespoons olive oil or 3 tablespoons butter
- 12 cup red wine and 1/2 cup port wine
- 4 cups beef broth
- 18 teaspoon dried thyme
- 12 teaspoon celery seed
- 1 large bay leaf
- salt and pepper
- 6 slices French bread
- 2 cups grated swiss cheese
- 1 cup grated parmigiano-reggiano cheese
- 1 (750 ml) bottleof la fin du monde ale
- In a large saucepan or soup pot, caramelize half the onions at medium/low heat (1 of each color) along with the green onion and the garlic in the butter or olive oil, stirring often, until mix is a dark gold color (about 20 minutes).
- Deglaze with La Fin du Mondse, while scraping bottom of pan.
- Reduce to half.
- Add broth, port wine, red wine, thyme, celery seeds, bay leaf and remainder of chopped onions.
- Preheat over to 450 degrees F.
- Salt and pepper to taste.
- Bring to a boil, reduce heat and simmer for about 25 minutes.
- Pour soup into 6 oven proof bowls.
- Add a slice of bread over each one and cover with 1/3 cup swiss cheese and 1/6 cup of Parmigiano Reggiano.
- Place the blows on a cooking tray and bake until brown.
