White Navy Bean Soup Recipe
- 1 pound dry white navy beans
- 2 (1 inch) slices smoked ham
- 1 lg. onion, minced
- 2 cloves garlic, chopped
- 2 stalks celery, cut into one inch pcs
- Salt, black pepper, cayenne pepper to taste
- 1/2 c. minced green onion tops (garnish)
- Wash beans, cover with water two inches over top, soak overnight.
- Add in ham, onion, garlic, celery.
- bring to a boil, lower heat and simmer till beans are tender (additional water can be added if mix is too thick).
- Puree mix in processor, return to pot and season with salt, black pepper and cayenne pepper.
- Serve in soup bowls, garnish with green onions tops.
