Lemon Snap Peas
- 1 tsp grated lemon zest
- 1 tsp chopped thyme
- 2 tbsp unsalted butter
- 1 lb sugar snap peas, trimmed
- 1 salt and pepper to taste
- Melt butter in a skillet over medium high heat.
- Add peas; saute 2 minutes, stirring constantly.
- Add remaining ingredients and cook for another minute, or until peas are crisp tender.
