Chewy Cranberry Cookies (Low Fat)
- 1 cup sugar
- 14 cup low fat margarine, softened
- 14 cup frozen apple juice concentrate, thawed
- 2 egg whites
- 1 12 teaspoons vanilla
- 1 12 cups unbleached flour
- 1 cup quick-cooking oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 12 teaspoon cinnamon
- 2 cups dried cranberries, coarsely chopped
- 12 cup chopped walnuts (optional)
- *Don't dilute applejuice.
- Preheat oven to 350F and lightly grease cookie sheets.
- In a large bowl, cream margarine and sugar until well blended.
- Add apple juice concentrate, egg whites, and vanilla; beat well.
- In a medium bowl, combine the flour, oats, baking powder, baking soda, & cinnamon.
- Gradually add to creamed mix.
- until a soft dough forms.
- Stir in cranberries (and walnuts if using) .
- Drop by level tablespoons onto cookie sheets-1 inch apart-bake for 14 minutes or until lightly browned.
- Remove to cooling rack.
- Enjoy with a glass of low fat milk or hot chocolate!
