Catchall Chicken Cacciatore

  1. Add oil to a nonstick pan, heat on low.
  2. Slice chicken into thin, large bite-size pieces and add to pan.
  3. Shave garlic over chicken into pan.
  4. Shred a carrot and dice celery, add to pan and simmer for up 5 -7 minutes until crunchy tender.
  5. Meanwhile cube zucchini and chop the spinach, Set aside.
  6. Add zucchini, spinach, mushrooms and tomato sauce.
  7. Toss to coat.
  8. Cover and turn off heat until ready to reheat and serve.
  9. Cook the pasta until desired tenderness is reached.
  10. Reheat chicken dish when pasta is nearly done.
  11. Drain pasta and divide equally among plates or bowls.
  12. Top pasta with chicken cacciatore or mix together before dishing out onto individual plates.
  13. Enjoy!
