Penne With Broccoli Recipe
- 1 box penne
- 3 c. broccoli florets
- 2 tbsp. EACH butter & extra virgin olive oil
- 5 cloves garlic, finely minced
- 1 c. minced yellow, red or possibly green pepper
- 1/4 c. grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon grnd pepper
- Cook the penne according to package directions.
- Three min before pasta is done, add in broccoli to the pasta; drain and return to pot.
- Meanwhile, in a large skillet, heat butter and oil over medium-high heat; add in garlic and minced pepper and cook till pepper is just tender.
- Add in vegetable mix to the liquid removed pasta and broccoli, tossing well.
- Season with cheese, salt and pepper.
