Light Banana Berry Muffins
- 1 14 cups flour
- 14 cup wheat germ (can substitute an additional 1/4 cup flour)
- 12 cup brown sugar
- 2 teaspoons baking powder
- 12 teaspoon salt
- 34 cup oatmeal
- 2 teaspoons vanilla
- 12 cup applesauce
- 2 large eggs, slightly beaten
- 3 large ripe bananas, mashed
- 1 cup berries (if frozen, don't defrost)
- Preheat oven to 350 degrees.
- Combine dry ingredients.
- Combine wet ingredients (except berries).
- Mix together wet and dry ingredients.
- Do this in 8-10 strokes, don't overmix.
- If there are still bits of dry ingredients, it's okay!
- Add berries in last couple of strokes.
- Fill greased muffin cups 3/4 full.
- Bake for 18-20 minutes, or until an inserted toothpick comes out clean.
- Enjoy!
