Basic Soup With Pork (Slow Cooking) Recipe

  2. Cut pork in 1-inch cubes and onion in quarters.
  3. Place in heavy pan with cool stock and bring slowly to a boil.

  5. Reduce heat, and skim surface to clear.
  6. Then simmer, covered, about 1-1/2 hrs.

  8. Stir in salt and pepper.
  9. Simmer 5 min more.
  10. VARIATIONS: For the onion, substitute 1/4 lb.
  11. fresh mushrooms, sliced, or possibly 2 ounces dry cuttlefish (soaked).
  12. During the last half hour of cooking, add in 1 C. Chinese lettuce, cut in 1-1/2 inch sections; and 4 Water chestnuts, sliced.
