Maude Hyde'S Fresh Apple Cake
- 1 1/2 c. salad oil
- 2 c. sugar
- 3 eggs
- 3 c. flour
- 1 tsp. soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. chopped nuts
- 1 c. chopped dates
- 3 c. chopped fresh apples
- 2 tsp. vanilla flavoring
- Mix oil and sugar; cream well.
- Add eggs one at a time and beat well after each addition.
- Sift flour and dry ingredients together; reserve enough flour to dredge nuts and dates well.
- Add flour to the creamed mixture.
- Add balance of nuts, apples and dates.
- Add vanilla last.
- Batter will be stiff, but apples will supply the moisture.
- Bake in a well-greased and floured tube pan at 325u0b0 for 1 to 1 1/2 hours or when tested with a pick.
