Pimento-Grilled Lamb Chops

  1. Mix thyme, onions, garlic, and some pimento oil together and place half in a shallow baking pan.
  2. Sprinkle black pepper on both sides of chops and place on top of mixture.
  3. Put remaining mix on top and marinate for 1 to 2 hours.
  4. Just before grilling, season with salt.
  5. Grill to desire doneness.
