Roasted Garlic-White Bean Spread
- 1 bulb garlic (about 3 oz.)
- 1 Tbsp. plus 1/2 tsp. olive oil, divided
- 1 can (15 oz.) navy beans, rinsed, drained
- 1 to 2 Tbsp. water
- 2 tsp. chopped fresh rosemary
- 1/4 tsp. ground black pepper
- lightly salted woven wheat crackers
- Cut off and discard top third of garlic bulb; drizzle with 1/2 tsp.
- oil.
- Wrap completely in foil.
- Bake at 400F for 40 minutes or until garlic is tender.
- Cool completely.
- Squeeze garlic pulp from bulb.
- Place in blender container with beans, remaining 1 Tbsp.
- oil and water; cover.
- Blend using pulsing action and scraping side of container until well blended.
- Transfer to serving bowl.
- Add rosemary and pepper; mix well.
- Garnish with rosemary sprigs, if desired.
- Serve as a spread with crackers.
