Roasted Garlic-White Bean Spread

  1. Cut off and discard top third of garlic bulb; drizzle with 1/2 tsp.
  2. oil.
  3. Wrap completely in foil.
  4. Bake at 400F for 40 minutes or until garlic is tender.
  5. Cool completely.
  6. Squeeze garlic pulp from bulb.
  7. Place in blender container with beans, remaining 1 Tbsp.
  8. oil and water; cover.
  9. Blend using pulsing action and scraping side of container until well blended.
  10. Transfer to serving bowl.
  11. Add rosemary and pepper; mix well.
  12. Garnish with rosemary sprigs, if desired.
  13. Serve as a spread with crackers.
