Neua Nam Tok

  1. Preheat a grill or broiler.
  2. Sprinkle the steak with salt and pepper, then grill for about 4 minutes per side or until medium-rare.
  3. Remove from the heat and let rest for about 10 minutes.
  4. Meanwhile, whisk together the nam pla, lime juice, garlic, shallots, chiles, and sugar.
  5. Cut the steak into 1/4-inch slices and immediately toss the steak with the dressing.
  6. Place the lettuce, cucumber, mint, and cilantro on a plate and top with the steak and dressing.
  7. Serve immediately.
