Mesclun Salad

• 1 pound mesclun (mixed baby greens)*, rinsed and spun dry
• 1/4 cup extra-virgin olive oil
• 1 1/2 tablespoons Champagne vinegar* or other wine vinegar
• *available at specialty foods shops and some supermarkets

1. In a large bowl toss mesclun with oil and drizzle with vinegar.
2. Season salad with salt and pepper and toss.
