Cucumber Spirals with Spicy Peanut Dressing
- 1 seedless cucumber run through a spiralizer
- 4 tbsp Pb2 (peanut butter powder)
- 3 tbsp water
- 2 tbsp low sodium soy sauce
- 2 tbsp rice wine vinegar
- 2 tsp honey
- 1 tsp toasted sesame oil
- 1 tsp chopped garlic
- 1 tsp red pepper flakes (or less if you prefer less spicy)
- 1/2 tsp ground ginger
- 1 splenda packet
- 3 tbsp chopped peanuts (optional) I omitted to cut back on calories
- Add cucumbers to a bowl.
- Mix PB2 with water(it will be thick) then whisk in all remaining ingredients.
- Pour over cucumbers and allow to chill in refrigerator for at least one hour before serving.
