Barley and Bean Salad
- 1 cup raw barley, rinsed and cooked
- 1 (15 ounce) can small white beans, rinsed and drained (or any other beans)
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 medium cucumber, peeled, seeded and chopped
- 14 cup minced red onion
- 12 cup chopped red bell pepper
- 1 medium carrot, shredded
- 2 tablespoons fresh parsley, minced
- 12 cup prepared Italian dressing (I used Good Seasons)
- Mix all together in medium bowl.
- Serve.
- Refrigerate leftovers.
