Flautas
- 1 lb potatoes
- 8 oz fresh ground chorizo
- 8 each green onions
- 1 salt
- 11 each six inch corn tortillas
- Cut potatoes into 1 inch pieces and boil until tender
- Cook chorizo over medium high heat until brown, break into small pieces while cooking
- Add onions, stir and cook for 1 minute
- Add cooked potatoes to meat and mix well
- Add salt to taste
- Heat tortillas in microwave for 1 minute to soften
- Place about 1/3 cup meat mixture on each tortilla and roll
- Secure the open flap by inserting a toothpick straight in half way.
- After rolling your second tortilla, secure to the first one with the same toothpick
- Repeat until all the chorizo is used
- Heat about a half an inch of oil in large skillet over medium heat
- Place toothpicked pairs of tortillas in oil and cook for 2-3 minutes per side, don't crowd the pan, do batches
- When browned and crispy remove from oil to paper towels
- Remove all toothpicks, serve with pico de gallo, sour cream or guacamole
