Gorgonzola Cups
- 8 pieces Bacon, cooked and crumbled
- 2 cups Roma Tomatoes, Diced (about 4)
- 8 ounces, weight Gorgonzola Cheese
- 1 package Phyllo Cups
- Preheat oven to 350.
- Cook bacon until crisp.
- Drain on a paper towel, then chop or crumble.
- Dice tomatoes.
- Mix bacon, tomatoes and Gorgonzola cheese together in a bowl.
- Spoon into Phyllo cups until just mounded.
- Place on a baking sheet.
- Cook for 20 minutes until slightly browned on top/edges.
- Serve hot/warm will be very hot to pop in your mouth so let it cool slightly.
