Gorgonzola Cups

  1. Preheat oven to 350.
  2. Cook bacon until crisp.
  3. Drain on a paper towel, then chop or crumble.
  4. Dice tomatoes.
  5. Mix bacon, tomatoes and Gorgonzola cheese together in a bowl.
  6. Spoon into Phyllo cups until just mounded.
  7. Place on a baking sheet.
  8. Cook for 20 minutes until slightly browned on top/edges.
  9. Serve hot/warm will be very hot to pop in your mouth so let it cool slightly.
