Tofu Egg Salad
- 1 package firm tofu
- 1/4 c. mayonnaise
- 1 tbsp. sweet pickle relish
- 2 tsp. milk
- 3/4 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/2 tsp. turmeric
- 2 thinly sliced
- 1 head Boston lettuce
- 2 small tomatoes
- In medium bowl, with fork, mix tofu with mayonnaise, pickle relish, milk, mustard, salt, and turmeric until tofu becomes small pieces the size of peas.
- Stir in celery.
- Cover and refrigerate until ready to serve to allow flavors to blend.
- To serve, arrange Boston lettuce leaves and tomato slices on 4 dinner plates; top with tofu mixture.
