White Chocolate Cranberry Oatmeal Cookies
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 12 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 cups instant oats
- 1 cup dried cranberries
- 1 cup white chocolate chips
- 1 cup nuts (replacement for one of the add-ins above) (optional)
- Preheat oven to 350 degrees F.
- Cream shortening & sugars.
- Blend in eggs & vanilla.
- Sift in flour, salt & soda.
- Fold into creamed mixture along with oats, cranberries, & chocolate chips (or other optional ingredients).
- Roll into balls & place on greased cookie sheet.
- Flatten with fork.
- Bake 10-12 minutes (less for dark cookie sheets).
