Roasted Vegetable Medley with Bacon
- 1-1/2 lb. (675 g) Brussels sprouts, trimmed, halved
- 4 carrots, peeled, cut diagonally into 1/4-inch-thick slices Target 2 lb For $3.00 thru 02/06
- 1 large red onion, thinly sliced
- 8 slices bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 1/4 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing, divided
- 2 Tbsp. Kraft 100% Parmesan Aged Grated Cheese
- Heat oven to 400 degrees F.
- Toss vegetables and bacon with 2 Tbsp.
- dressing; spread onto 2 parchment-covered baking sheets.
- Bake 35 to 38 min.
- or until vegetables are tender, stirring after 20 min.
- Spoon vegetable mixture into large bowl.
- Add remaining dressing; mix lightly.
- Sprinkle with cheese.
