Red Velvet Cake

  1. Cream the sugar and oil in a mixing bowl.
  2. Add eggs; beat well.
  3. Add the vinegar and food coloring; beat well.
  4. Sift the flour, soda, salt and cocoa together; add to the creamed mixture alternately with buttermilk.
  5. Add 1 teaspoon vanilla; beat well. Pour into 2 greased and floured cake pans.
  6. Bake at 350u0b0 for 30 to 35 minutes.
  7. Cream the margarine and cream cheese in a bowl; add remaining vanilla.
  8. Sift the powdered sugar; add to the creamed mixture gradually.
  9. Add nuts; mix well.
  10. Spread on top of cake layers and place layers together.
  11. Spread on side of cake.
