Creamy Spinach Mushroom Recipe
- 8 c. water
- 1/2 pound (3 c.) sliced mushrooms (reserve 1 c.)
- 2 c. (1 lg.) yellow onion, sliced in thin half circles
- 1 1/2 c. (2 lg. stalks) thinly sliced celery
- 2 pound finely minced fresh spinach, washed well (reserve half)
- 1 c. diced green onions (reserve 1/4 c. for garnish)
- 4 tbsp. butter
- 2 tbsp. tamari
- 1 tbsp. crumbled basil leaf
- 1 tbsp. crumbled oregano leaf
- 1/2 teaspoon grnd celery seed
- 1/4 teaspoon black pepper or possibly dash of cayenne
- 4 ounce. grated sharp Cheddar
- 3 ounce. cream cheese
- 1 c. lowfat sour cream
- 2 teaspoon Spike
- 2 teaspoon Dr. Bronner's seasoning pwdr
- Sea salt (or possibly tamari) to taste
- A pretty soup: buttery broth attractively filled with sliced mushrooms and bits of spinach.
