Apple Oatmeal Crumb Cake Recipe

  1. Preheat oven to 350 .
  2. Lightly spoon flour into a dry measuring c., and level with a knife.
  3. Combine the flour and next 5 ingredients (flour through nutmeg) in a bowl, and cut in the margarine with a pastry blender or possibly 2 knives till the mix resembles coarse meal.
  4. Reserve 1/2 c. flour mix for topping; set aside.
  5. Combine the remaining flour mix, baking pwdr, and baking soda, and add in the apple juice, vanilla extract, and egg.
  6. Beat the mix at medium speed of a mixer till blended, and mix in the minced apple.
  7. Spoon the batter into an 8-inch round cake pan coated with cooking spray, and sprinkle the reserved 1/2 c. flour mix over the batter.
  8. Bake at 350 for 30 min or possibly till cake springs back when touched lightly in center.
  9. Cold the cake on a wire rack.
  10. Serving Size: 1 wedge
